My Go-To Vegan Meal

It’s quick, simple, and nutritious!

This meal comes from my pre-vegan days. I started making it during my barely-making-it-financially days!

It’s super simple and, depending on the types of products you use, can cost next to nothing.

The meal includes rice, a bean, and a green.

For example, today I have brown rice, black beans, and kale (from the garden).

I cook the rice separately, or microwave a frozen bag. Add that to a bowl, then top it with pan-cooked beans and greens. To that,  I have added my spices: salt, pepper, cayenne pepper, and garlic. You will use spices you like.

That’s it. I have been doing this for 30+ years, and it never gets old. I highly recommend it. And yes, you can add anything to it, like a peanut sauce, a slab of grilled tofu, or other veggies. But even this basic recipe works for me.
