A long-time favorite of ours continues to serve incredible Mexican food with the best hospitality.
I was fortunate to be back in Denver for a week and a half, and super grateful that I got to eat at one of our favorite restaurants, Tarascos!
Three times!
I have been loving meals at Tarascos since 2011. They serve the best vegan Mexican (from Michoacan) food in Denver. They have always had a ton of vegan options, and can do most dishes vegan. They also serve a bunch of different juices, smoothies, and have a full bar.
The hospitality here is incredible. Having dined there three times in the last couple of weeks, I’m ecstatic to say that everything they have always been still exists!
My favorite meal has been the spinach enchiladas with an order of sopa tarasca. Delicious. I have fond memories of living in Lakewood and heading over anytime one of us was starting to feel like allergies or a cold, and ordering the sopa tarasca. Perfect! It always made me feel better, and although it’s “just” a bean soup, it is packed with flavor.
Ask if they have any vegan moles prepared.

And, they have a brand new space. A lot more room and different types of seating, right next door to the original location. It’s super comfortable, and I was happy to see several others dining each time I was there.
If you live in the Denver area and are craving delicious Mexican food, go visit them now. And of course, if you are visiting, add Tarasco’s to the list of places where you want to eat.
Noe is the owner and always wants to make sure each guest has a delicious, healthy meal and is warmly welcomed. I can say that has always been the case for us, as it was on this recent trip.
